These super easy and flavorful salsa boats will have your kids craving their veggies.
Best of all, you can make them in advance and the kids can pull them out at snack time or pack some in their lunch for school.
What you'll need:
- 1 container Cocina Fresca Mild (Sweet Onion) Refrigerated Salsa
- 10 Roma Tomatoes
- 8 oz freshly grated colby jack cheese
How to make it:
Wash the Roma tomatoes and then slide in half length wise (shape should look like a boat).
With a spoon gently scrape out the seeds being careful not to remove the firm flesh part of the tomato.
Add 2 large spoonfuls of Cocina Fresca Mild (Sweet Onion) Refrigerated Salsa into your newly formed tomato boat.
Sprinkle the top with freshly grated cheese.
Option #1: Toast in the toaster oven for 5 minutes to melt the cheese and slightly soften the tomato, serve warm.
Option #2: Refrigerate and serve cold as an after school snack or lunchbox treat.
